My philosophy

to feel good at the table is my intention

Well-being at the table can encompass many ideas and could mean something different for different people.

My beliefs have taken time to mature, evolving with education and refining with experience. Most important to me are my nutritional and dietary values. I hold high standards and prefer to utilize the abundance of vegetable options as well as other fresh ingredients.

I design dishes that are recognizable, healthy and well balanced. Mastering techniques and sometimes breaking rules are also part of my individual style. Being from Italy gives me a unique view on haut cuisine.

Teaching, training and sharing my passion is my life calling.

I look forward to meeting you one day soon as a guest at my downtown restaurant or as a student in one of my classes. Amateur or professional all are welcome.
